Description

The Vineyards

This wine comes from the Taco, Alto and Choupal vineyards, at an average altitude of 300 metres. The soils are of granitic origin with a clay-sand texture. The vines are mostly trained on bilateral cordon, which optimises both the grapes’ exposure to the sun and the ventilation of the leaves, ensuring good ripening and excellent fruit health. We adopted organic farming in 2017 and moved to biodynamics in 2020, reflecting our commitment to sustainability and soil regeneration.

Winemaking

The grapes were hand-picked into 25 kg boxes and taken to the winery, where they were destemmed. Alcoholic fermentation took place in stainless steel tanks at 26–27 °C. After fermentation, the wine underwent five days of post-fermentation maceration. Malolactic fermentation occurred naturally in stainless steel, after which the wine was moved to used French oak barrels, where it remained for 12 months.

Tasting Notes

The nose stands out for its definition and purity of fruit, led by forest fruits, with hints of spice and cedar from the time in barrel. On the palate it is fresh, elegant and taut, with fine tannins and well-integrated acidity giving it structure and verve.

A long, enveloping finish.
